Other then drilling a couple of holes, and $, what is the difference between the Curt 15860 vrs the Draw Tite DT45511? FOR 2019 GMC 3500 long bed

The Draw-Tite Trailer Hitch Receiver - Custom Fit - Class V - 2-1/2" # DT45511 (no longer available) does require drilling for installation. It also requires the OEM factory bumper and brackets and allows the full size spare tire. The Curt Trailer Hitch Receiver - Custom Fit - Class V Commercial Duty - 2-1/2" # C15860 does not require drilling and does not require the OEM bumper or brackets. It is rated for the same capacities.
Both are great hitches, you will just take more time installing the Draw-Tite option and it will require additional tools. I've attached the installation details to assist.
