Yes, the Pop & Lock Custom Tailgate Lock # PAL8140 referenced in your question will fit and work great on your 2017 GMC Canyon that features the backup camera in the tailgate handle. There will not be any interference between the 2 components. I verified this with Pop & Lock.
If you don't happen to have existing power locks then you will just need to add the Switch Kit # PAL9520. If you have a Crew Cab model you will likely also need to add the Extension Harness # PL9510 to reach the required distance from the tailgate to your cab.
