Question:
My old brakes free backing, surge, had a sticker with the adjustment procedure on it, are these new brakes the same, also free backing? Old brakesi Tighten until you cannot turn by hand and back off ten 10 clicks

The adjustment procedure you mentioned of tigthening the adjustement till you can't turn the wheel by hand and then backing off 10 clicks is the standard way to adjust brakes and would be the correct way to adjust the Hydraulic Brake Kit # AKFBBRK-35-D that you referenced. If you follow that procedure with these assemblies you'll be good.
I also attached a video that shows how to adjust brakes as well. At about the 4:39 mark our installer begins adjusting the brakes.
