I am having trouble determining which wire is gonna be used to activate the brake controller.

Your 2017 Mercedes Sprinter 2500 may actually have brake controller port or wiring harness that you can use to install a brake controller. I have included a link to a video that may help. It is on a slightly older Sprinter but can be used as a guide. The 2006 to 2018 are part of the same generation.
If the van has a third brake light (CHMSL: center high mount stop lamp) and it is the only thing on that fuse you could use it to attach to the red brake controller wire.
The white ground wire should be attached to the negative battery terminal. Black should be connected to the positive terminal via a 30 amp circuit breaker such as # PK54530. And the blue wire is output to the trailer brakes.
