Can I order extra mounting brackets so that I can use the single valet with different trailers without having to keep uninstalling and reinstalling the same bracket? If so, whats the part # for the bracket alone?

Yes, you can get just the mounting bracket part that attaches to the trailer for the Trailer Valet # STC-V211. You will need replacement bracket # TV-0002. I have linked a video review for you.
