Roadmaster Tow Dolly part # RM-2000-1, will this work to tow a 2017 Honda Fit automatic CVT behind a Class C RV?

From my research your 2017 Honda Fit can be dolly towed and the Roadmaster tow dolly, part # RM-2050-1, should work just fine for you. It has a maximum capacity of 4,250 pounds which is plenty for the Honda and it holds up to 16 inch wheels.
I've also attahced a review video of the dolly for you to check out.
I recommend cutting off the 4-way that's on the dolly and adding a 7-way connector using part # HS381-9000. This way the dolly will have a 7-way connector and you'll be able to operate its electric brakes using a brake controller. If you don't have a brake controller for your RV I also recommend the Prodigy P3, part # 90195.
