I was wondering if I could buy two sets of kayak carriers and angle them towards eachother to carry two kayaks?

You can angle two kayak carriers towards each other to carry them on the roof at the same time. You'll need a roof rack to mount the carriers on.
The Yakima JayLow, part # Y04073 is a great example of a universally compatible kayak carrier that can do this.
If you don't already have a roof rack, I recommend adding the Rhino Rack Vortex kit, consisting of:
Rhino Rack Vortex Crossbars, part # RRVA126B-2
Rhino-Rack 2500 Series Vortex Legs, part # RRRLKVA
Rhino-Rack DK Fit Kit for Vortex Legs, part # DK358
