will the surge protector work on 50-amp service if I use an adapter?

No, instead you will want to use the 50-amp version of the Camco Power Defender, which is their part # CAM55313. This provides the same circuit analyzer and voltage monitoring functions along with surge suppression but in the 50-amp capacity you need.
A similar but better option is their RV Power Defender Voltage Monitor # CAM55306 which provides those functions but adds the ability to automatically disconnect when dangerous incoming voltage levels are detected. It will automatically re-connect once voltage drops to a safe range (between 102V and 132V).
Camco RV Power Defender Voltage Analyzer # CAM55310 is suitable for 30-amp service only.
