Waht is the maximum insulated, single wire diameter that can be routed through these clips?

Due to the flexibility of the wiring clamps part # CE16867A it's hard to say exactly what the max would be as you could bend the clips as needed. Typically the heaviest gauge wire used with them is 10 gauge.
