I am looking for a Class 5 Hitch to install on my 1995 GMC K2500 8 foot bed with a 37inch wide frame. What could you recommend?

For your 1995 GMC K2500 with 37 inch wide frame, I recommend the Curt Trailer Hitch Receiver - Custom Fit - Class V XD - 2" # C15325. This is a confirmed fit for your truck and is a heavy duty hitch rated for 2400 lbs tongue weight and 16000 lbs gross towing weight. With weight distribution, that towing capacity rating increases to 17000 lbs. These ratings may be higher than your truck capacities, so you will want to make sure to check your owners manual.
The distance from the mounting surface of the hitch down to the hitch tube is going to be 4-1/4 inches. If your truck has the standard bumper or step bumper, this hitch is confirmed to fit.
If you don't already have trailer wiring, I recommend the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118315 for a standard trailer. This harness plugs into your wiring harness which is located beneath your vehicle along the driver's side frame rail. If you have a factory 7 way and want to replace it, I recommend the 7-Way Pre-Wired Car Connector, 7' Lead # 20023.
For a ball mount with that capacity, I recommend the Curt Heavy Duty Forged Ball Mount for 2" Hitches - 3" Rise - 4" Drop - 17,000 lbs # C45341. You can use a hitch ball like # 63840 for a 2-5/16 inch ball or # A-90 for a 2 inch ball with a 10000 lb capacity.
You may want to consider a locking hitch pin like # e98880 to secure your ball mount.
