On your 2007 Honda Pilot the parts you mentioned can all be used for towing a trailer.
The Curt Class III Trailer Hitch Receiver # 13328 is confirmed to fit and will work great for you.
The wiring harness # C55336 is the correct part for your Pilot. However, it isn't designed to be mounted under the bumper of the vehicle. It's generally stored inside the rear compartment and then ran out of the closed rear hatch when in use. The thick rubber seal along the hatch doesn't damage the wiring and with it stored inside the Pilot it is less susceptible to any damage while not using it.
With that being said, if you want to find a way to route it through the floor of the Honda and mount it under the bumper you certainly can. And the short bracket # 18140 with the 4-pole bracket # 18144 will work to install it.
You'll also need a ball mount and hitch ball. I've attached link of our selection of ball mounts for a 2 inch hitch receiver as well as an article to help you determine the correct rise or drop you may need. Once you choose a ball mount you can then choose a hitch ball to fit it.
One way to make choosing a ball mount easier is to go with an adjustable ball mount like the B&W Tow & Stow # BWTS10038B. It features the ability to be flipped under the hitch when not using it and will provide up to 5-1/2 inches of rise or 5 inches of drop.
For a pin and clip to fit you can use # PC3 or if you'd like to have a locking pin you can use # BX8858.
