I cant find information on the mounting plate thickness for draw Tite 36065 . I know I need a 3/4 inch shank. BUT can I use a short shank or do I need a medium.

Yes, you could use a short shank. For a 2 inch ball with short shank that fits ball mount # 36065 you can use # 19258. And for a 1-7/8 inch ball use # 19256.
