Question:
What will fit a 2011 GMC 3500 8 ft bed that comes with a Trailering Wiring Provisions for a fifth wheel?

If your Sierra already has the 7-way connector installed in the bed, you can use an adapter to convert the 7-way to a 6-way. Hopkins makes a great heavy-duty adapter. If the center pin on the 6-way connector on the trailer carries the power to the trailer brakes, use part # HM47085. If the center pin is used for an auxiliary circuit, use part # HM47083.
If you do not have the connector in the truck bed, I would recommend part # 50-97-410.
