I own an 08 Nissan Altima, SL, 4 cylinder. I have a trailer approx. 200 lbs. that I am loading my 850 lb. Honda Goldwing on and pulling throughout Pennsylvania hills and mountains. I have been told that this vehicle is rated at a 2000 lb. pulling capacity. That should give me plenty of wiggle room on misc. things I want to put on the trailer with my bike. Is there anything else I should be aware of?

The hitch itself will provide no problems. It will pull up to 2000 lbs all day long with no issue. Since you are going to be traveling in a hilly area, I would strongly suggest installing a transmission cooler to protect your transmission.
The Derale Series 8000 Plate-Fin Transmission Cooler, part # D13501 would be a great choice. The cooler is cheap insurance for your transmission.
The installation is fairly straightforward, we have an installation video showing a similar cooler being installed on a Honda CR-V. I will provide a link to the video below.
You will also need a trailer connector to provide lighting for your trailer. If your Altima is the coupe, you will need part # 56022, if your Altima is a sedan, use part # 118470.
