Question:
Will this item connect to a Coleman Road Trip grill in order to eliminate using the Coleman supplied regulator connection for small propane bottles and connect directly to the propane connection on a Winnebago Vista 30t? If not, what if anything do I need to make the Road Trip grill operate off propane supplied throughout he motorhomes propane connection?

Since the propane supply on your trailer will be regulated and since you can't regulate propane twice, I can not recommend an adapter like part # CAM59853. Per the manual for your Coleman Road Trip grill, the regulator is not to be removed as you said you wanted to do.
If you decide you want a grill that is designed to let you run off the propane connector on your Winnebago I recommend the Camco RV Olympian 6500 Stainless Steel Grill w/ Quick Connect Hose, part # CAM57245.
