Question:
The landings in our area are usually very steep. when I go to load the boat, if ZI get the trailer to deep, the nose goes under the winch, if I get it shallow enough to stop the nose from going under the winch, then the boat will not go all the way up on the trailer and it is too heavy to winch the last 18inch to 24. What would you recommend rollers?.

Normally a long keel roller would do the trick to help your boat launch and not end up under the winch. But since you submitted a picture of your boat and there's no good place to install a roller your best option would be to go with a set of roller bunks on your trailer.
I would recommend measuring your current bunks and then going with roller bunks that would match your current wood bunk length. The roller bunks will allow you to put the trailer shallow in the water and still be able to winch the boat up the trailer since rollers allow for much easier winching. For a set of 5 foot long roller bunks you would want the part # DL21741 that comes in pairs.
