Can this part be trimmed to fit if the ceiling is only 1inch thick?

Yes, you could trim the Garnish part # BVA0205-07 down if needed to install it on a thinner roof like yours that is only 1 inch thick.
I would recommend marking it where it needs to be trimmed and using something like a rotary cutoff tool. Make sure you have the garnish secured so that it does not move around when trimming. The edges will be sharp after trimming the garnish so I would suggest using sandpaper to smooth the edges that have been trimmed.
