The Mopar 5th wheel hitches are manufactured by Curt and are Q series heads like the # C16530-16021 you were looking at, so in order to use your existing Mopar 5th wheel hitch you would need to swap the legs out for a set that will work in the Chevy OEM prep package. To answer your first question, yes, Sidewinder/5th Airborne pin boxes are very sturdy. They have quite a bit more capacity than your 11k trailer would require too. There are 20k versions of the Sidewinder like the part # RP34FR but it does not come with the cushioned feature. For an 11k trailer though the 16k options would be more than adequate.

Since vehicles that have 2-1/2 inch hitches don't normally use friction sway control as it's not normally needed there aren't any brackets for the smaller balls of the units that are setup for that hitch size but I do have a solution Mehdi. I do have a possible option for you but the Replacement Drop Leg for etrailer and Ram Square Direct Weld Jacks - 3K # TJD-5000-FT only has a capacity of 3,000 lbs so that wouldn't be enough for your dump trailer.
The possible option I have is the Replacement Drop Leg with Foot for etrailer and Ram Square, Direct Weld Jacks - 7,000 lbs # TJD-7000-FT. This replacement drop leg has a capacity of 7,000 lbs so it will be much closer to your dump trailer's capacity.
