Hey Gabe. Since you do not have the factory harness to add a 4-way or 7-way connector to your 2004 Freightliner Sprinter you will need the Curt Powered Tail Light Converter item # C59236. This connector is going to wire into your tail light harness and then you'll need to run a power line directly to your battery. That's actually what we recommend the most for people towing trailers with electric brakes that have tow vehicles with air brakes. Installing a P2 part # 90885 will allow you to totally bypass having to interface with the air system and will work very well.
Hardwiring a brake controller isn't too difficult. It basically is just a matter of running a few wires. One to the positive post of the battery, one to the ground, one to the trailer connector, and then one to the stoplight circuit.

The brake wire you need is terminated in a connector under the left side control panel next to the driver seat of your 2005 Holiday Rambler Endeavor. There should be a cover on the vertical side of the panel facing the driver seat and the connector will be behind it. There should be a 12 volt power wire (run black wire here), a ground wire (white wire), a brake switch wire (red wire) and a brake output circuit (blue wire) there.

I do not have a plug-in style brake controller harness that was designed for a Freightliner XCS chassis brake port, but I do have a hard wire kit that will allow you to complete the installation of a brake controller. According to Fleetwood, the factory port or plug for a brake controller on the Ford F-53 chassis is coiled underneath the dash. Look for a 5 pin gray connector. I believe if you look in the center console area (right of the steering column) and up under the dash it will be there.

The Curt Trailer Hitch Receiver # 14250 that you referenced does mount on the inside of the trailer frame, but it does require bolts to be run through from the outside of the frame (see attached picture).
You will need to make sure that you have room on your frame as this is the best option for you. The only other options mount on the outside of the frame on your 2003 Freightliner Sprinter.

The Draw-Tite Class III 2 Inch Hitch, part # 75210, is for a 2006 Dodge Sprinter with a 140 inch or 158 inch wheelbase and either single or dual rear wheels. It will not fit the 118 inch wheelbase vehicle.

If the Freightliner chassis is a Sprinter then none of the hitches available, see link, are rated for 10,000 pounds. They max out at 7,500 when using weight distribution. You will also want to consult the vehicle owners manual for the towing capacity because it the vehicle is not rated for 10,000 pounds it won't matter if a hitch is rated that high. You always go by the lowest rated component in the system.
