I reached out to my contact at Blue Ox regarding the Base Plate Kit # BX2645 and he said on your 2018 Ford Flex the base outlets should extend past the grille about 1 to 2 inches. Then with the bracket arms plugged in you are looking at an extension of around 5 inches.

The brown wire from the operating unit on the Demco SBS Stay-IN-Play DUO Supplemental Braking System # SM99251 will splice to the orange wire from the breakaway switch and then continue on through the 20 Amp fuse up to the 12V positive post on your battery.

The Blue Ox Patriot Portable Braking System - Proportional # BLU37TR needs power for proper function, so it does require a direct connection to your battery which isn't an issue on your 2015 Ford Flex. Some vehicle require a separate connection to the vehicle using # RM-9332 to avoid the other features drawing power. The Patriot has its own battery for emergency use only so you still need a power supply.

According to my research, the brake controller port on your 2011 Ford Flex should be located under the dash directly below the steering column as shown in the attached photo. Please note there is a dummy plug on the end of the port that you will need to remove in order to install the brake controller harness. I have attached a drawing that shows how the wires are run for the # ETBC7 and brake controller wiring. There is no plug-in adapter available for a brake controller for your Flex with no factory towing package so it will be a hardwire installation. I called my contact at Tekonsha and they said the plug you sent the photo of is not the connector used for a brake controller.

According to my buddy at Tekonsha, all models of the 2010 Flex are equipped with the brake controller connector. It's located right behind the front edge of the dash, directly below the steering column. You'll need the # 3035-P Brake Controller Wiring Adapter.

ST trailer tires should be inflated to their listed max psi when inflated cold (meaning prior to trip). The trip will increase the heat of the tire due to the road friction and ambient temperatures so you will have an increased psi reading, which is accounted for in the tire rating. The Roadmaster fuse bypass # RM76511 is great because all you need to do is flip a switch to activate or deactivate the fuse. It's not a requirement though and based on my research, your owners manual doesn't say anything about pulling fuses to flat tow your 2011 Ford Flex. I also checked with Roadmaster and fuses don't need to be pulled.
It's still a good idea you check your owners manual just in case.

The two exhaust hanger bracket bolts shown in the linked video at the 2:04-minute mark certainly may be stubborn after 5 years in place. The spray-on lubricant you used, such as WD-40 or PB Blaster, may require some time and multiple applications to loosen the hardware. On your Edge it is hard to get that spray lubricant into the thread area where it needs to go.
