It sounds like you have a switch that has 3 positions, up, down, and off, similar to # PK34312. For each position that requires power there will be an input from the 12 volt power source and an output from the switch to the device it runs.
You will run power in from the 12 volt source to the switch. There is likely a single input from the 12 volt power source. Then one output for up and one for down that will attach to the hydraulic pumps wiring accordingly. There is also likely a terminal for a ground.
If you can tell me the make and model of the hydraulic pump I may be able to find something more specific.
