Witch terminal on the waterheater element is positive and witch is negative

The Camco Water Heater Element part # CAM02143 has two terminals, one for power and one for ground. That said, it does not matter which wire goes on which terminal as they are non polarity specific meaning you can switch the positive and negative wire without issue. If you are asking which color wire has which function on your specific water heater then I would need to know the make and model in order to provide this. However, if you just find the two wires on the water heater that go to the element you don't need to worry about positive and negative.
