Im looking at pulling a trailer hitch off a 2003 Nissan Xterra. What size socket will be needed

Since we don't know what brand hitch you have installed on the Xterra it's really pretty hard to say. I'd bring a set of sockets with popular sizes and you'll be good. The socket/wrench size you'd need for the hardware that comes with the Draw Tite hitch part # 75282 that you referenced would be 18 mm.
