We do offer a 2-inch Class V trailer hitch for your 1997 Chevrolet C/K Series Pickup with 10-Inch deep drop bumper. Curt hitch # C15317 offers a very substantial 2400-lb tongue weight capacity and a gross trailer weight rating as high as 17,000-lbs if used with weight distribution. If your truck carries a different weight rating then the lower-rated item becomes the overall limit.
This hitch installs without drilling or welding using the included hardware. Your spare tire will need to be lowered or removed temporarily for installation. The two linked articles on hitch installations may be helpful to you.
Note that a ball mount, pin and clip are not included, so you might consider an all-inclusive kit like
# EBMK2216 that includes a ball mount, two hitch balls and pin/clip. If you need a ball mount of different rise or drop the linked article will help you find the correct one.
