For that, go with the Maxxis ST235/80R16 Radial Tire w/ 16" Wheel - 8 on 6-1/2 # MXS79FR, Jason. The higher Load Range G 4,080 lbs gives you more protection against heat from long days under heavy weight. If you only load to half capacity, the # MXS69FR 3,420 lbs will ride softer, but it's technically only going to give each axle a capacity of 6,840lbs which isn't enough for 7k axles, so I'd stick with the # MXS79FR.
This is also bead-balanced already, so you'll have less vibration and won't need to go get them balanced at a shop!
Do you park the trailer inside during the winter? That can affect which finish holds up best.
