Hello AJ, good question, and nice boat! The Andersen Trailer Jack Block # AN99VR is really only intended to be used on a jack with a foot plate, or just a straight tube. If you used it with a jack with a wheel, there would not be much keeping the wheel stable on top of the block. So my fear is it might be too easy for the trailer to roll off the block. It might be fine if you are on perfectly level ground. If the ground is uneven though things could get sketchy.
Does the wheel on your jack come off with a pull pin? I don't see one in your picture but I can't quite tell for sure. Your best bet for using the leveling blocks would be to just remove the wheel. That would make things much more stable. If that is not an option you might consider replacing your jack with one with a foot or straight pipe.
