I was reading the description of the item and cant figure out what size the mounting holes are for this product. What is the ideal stainless steel screw size for mounting?

I went out to the warehouse and pulled Black Mounting Bracket for A91 and AL91 Series Lights # A91BB and found that the largest screw size you could use is a 3/16 inch. The hole diameter is actually approximately 0.19 inches which is slightly larger than 3/16.
Given the coverall depth and the depth from the inside mounting surface, a 1/2 inch long screw at least would be ideal.
