Will installation of this hitch affect my Ford factory warranty?

No, it will not! Consumers are protected under the Magnuson–Moss Warranty Act. It allows aftermarket parts to be installed without warranty issues unless the install or part caused a problem. But the simple act of installing a hitch or other aftermarket part does not void the warranty.
The EcoHitch Stealth Hitch item # EH43SR you were looking at has been confirmed to fit only the PHEV models of the 2023 Ford Escape. If yours is the standard or hybrid model you'll need our etrailer item # e89YR hitch.
