I have a solution for you, but the "Junior" Locking Stainless Steel Flush Door Latch with Inside Release # L1833 that you referenced can only fit doors up to 7/8 of an inch in thickness.
For your 1 inch thick door you would want the Full Size Locking Steel Flush Door Latch # L3980 instead as this handle works on doors up to 1-1/6 inches thick. I attached a review video for this product for you to check out also.
