The first thing you will need to flat tow your 2002 Ford Escape would be a base plate kit. For that I recommend the Roadmaster base plate kit part # 481-3.
This will provide the connection point from your vehicle to the tow bar. The Roadmaster Falcon # RM-520 you referenced would work as a compatible tow bar, but for a nicer tow bar with more features that would make your flat towing experience much easier I would recommend the Sterling # RM-576. This tow bar has non-binding arms that will make connecting and disconnecting much easier, especially in a camp ground where the ground is uneven. The arms allow you to release the binding tension that is present in the tow bar any time the vehicles are not perfectly in line with each other.
This tow bar also comes with safety cables. For a lighting option I attached an FAQ article that details how to pick out the best kit based on your needs.
And finally, most states now require supplemental braking in the vehicle being flat towed. The easiest systems to set up and use are portable systems like the Blue Ox Patriot # BLU37TR. It applies the vehicle brakes in proportion to how much the two vehicle is braking. This is the safest way to stop and it reduces wear and tear on both vehicles.
