I have a 2019 Chevy Colorado Z71 turbo diesel and tow a travel trailer. I live and travel in hot climates. My trans temp pulling a trailer has gone up to 230 degrees. Concerned about best for cooling and least pressure . Which is best stacked plat, plate and fin or a combo trans/engine oil cooler?

A stacked-plate cooler has the same design as a plate-fin, but it uses high-flow turbulators which makes it more efficient. Stacked-plate is typically for heavy-duty towing, and I don't think you need a combination cooler either. In your case, I believe a plate-fin will be more than enough to keep your temperature safe.
You will want the largest cooler that fits in front of your radiator, which is the 11" wide x 8-3/4" tall x 7/8" deep Derale Series 8000 Plate-Fin Transmission Cooler Kit # D13503. I also recommend the # D13035 for an easy installation.
If you want to use a Combination Transmission and Engine Oil Cooler like the # D15902 you can, as long as you have the space for it. This measures 17" wide x 12-1/2" tall x 3/4" deep. For even more cooling you could go with a model that has a fan like # D15200 measuring 15-3/4" wide x 11-1/2 " tall x 5" deep.
