Based on the pictures provided it looks like a single-DIN stereo so I recommend the Jensen Heavy-Duty Mechless RV Stereo # JHD1130B. This stereo is on the lower price side of single-DIN stereos and will give your mom the ability to listen to AM/FM radio or plug in an mp3 or smart device via an auxiliary cable.
For just a little bit more you could get the Jensen RV Stereo w DVD Player # JWM70A, which can also play DVD's and CD's, connect to smart devices using Bluetooth, and be controlled by the jControl app that you can download on your smart device.
If I were to choose I would go with # JWM70A for the Bluetooth connectivity as it makes life a lot easier when you don't have to be tethered by cables.
