Will a set of factory running boards from a 2011 Chevy Silverado 2500 crew cab fit on a 2008 Chevy Silverado 1500 crew cab?

It truly depends on what model of nerf bars/running boards you have on both your 2011 Chevy Silverado 2500 Crew Cab and your 2008 Silverado 1500 Crew Cab. Generally speaking, nerf bar/running board manufacturers make individual models of both the bars/boards and the mounting hardware for each year/make/model/cab style. Although, sometimes there is a lucky overlap of compatibility.

For example the Westin R5 Running Boards # 28-51035 fit both of these truck models. They also come with the same mounting hardware kit.

However, in order to be 100% sure, feel free to respond to this answer with your particular model of running boards, and I can definitely confirm the compatibility for you.
