Is there a compatible shank that has more than 6 holes? Possibly 7-8 hole shank?

Yes, we do have a compatible shank for the Blue Ox 2-Point Weight Distribution w/ Sway Control item # BLU75FR. These shanks have the standard 1-1/4" hole spacing so they are compatible with many weight distribution systems.
For a 7 hole option you will want the Blue Ox SwayPro Weight Distribution Shank for 2" Hitches item # BXW4000. This shank has a total height of 10" and a total vertical adjustment of 8-3/4".
We have a 9 hole shank option as well it is the Blue Ox SwayPro Weight Distribution Shank for 2" Hitches - 9" Long - 9 Hole Adjustment item # BXW4002. This shank has a total height of 12-1/2" and a total vertical adjustment: 11-1/4".
I have attached diagrams that I made for both shanks to show you the dimensions. Both of these shanks have enough capacity to support the Blue Ox 2-Point Weight Distribution w/ Sway Control item # BLU75FR.
