Question:
Do the bolts have little squares under the heads that fit into the plate washers? Or how do you torque the nuts without holding the top of the bolt?

I went ahead and linked an installation video for the EcoHitch Invisi Trailer Hitch Receiver item # 306-X7257 on a 2019 Subaru WRX. These are the same steps as your 2021 WRX. You will see around the 16:10-16:50 part of the video that the bolts are pushed up against the frame to hold them in place while the washers, lock washer, and hex nut are tightened and then later torqued on. The hardware for this hitch uses standard bolts not carriage bolts so they do not come with a square beneath the head.
If you need a wiring harness to control your trailer or accessory's lighting functions I recommend the Curt T-Connector Vehicle Wiring Harness with 4-Pole Flat Trailer Connector item # C56259.
To round out your towing setup I recommend the Curt Towing Starter Kit for 2" Hitches item # C45534. This towing kit will provide you with a 2" ball and a fixed ball mount with a 3/4" rise and 2" drop. It also includes a hitch pin and clip, hitch receiver lock with keys, hitch cover, and a storage case.
