I have a 2004 Ford F-250 crew cab long bed. I am looking for a tonneau cover that doesnt block the view of my fifth wheel hitch while hooking and unhooking. As well as a cover that still allows the bed stakes holes to be usable. Please let me know what are the best options.

The simplest solution would be a tonneau cover that is easily removed altogether like the Bestop EZ Fold part # B1613501 that fits your 2004 Ford F-250 which when not in use folds up easily and comes off of the truck bed. This will give you complete access to the bed rails as well as a complete visibility when hitching to fifth wheel trailer.
Otherwise a soft roll up tonneau like the Lo Pro part # TX559601 would be the best compromise as it rolls up pretty tightly which allows visibility over it pretty easily and also has the stake pockets open.
