The Replacement Offset Coupler with Cable System for Ranch Hitch Coupler Adapter # AM3140 you were looking at with an 8" offset will work with a flat bed as long as the gooseneck ball is not recessed, or as long as the recessed portion is not more than 3-3/4" deep.
If your ball is recessed more than 3-3/4" deep then you will need to stick with your factory style coupler. Depending on which gooseneck hitch your truck has there may be an offset hitch ball option. If you can provide the model of your gooseneck hitch I would be happy to check.
