I currently have a trailer with the Dexstar Vintage Steel Wheel part # AM20208 on it. I was thinking about swapping the hubs out so I can fit a conventional trailer wheel on it. What parts would I need to complete this project? Any insight you can give would be appreciated. Also In your opinion is it worth making the switch or are there benefits to sticking with the original hubs?

The Dexstar wheels are still in use by a lot of folks and as you already identified, available for purchase here at etrailer.com too under # AM20208. As for advantage or disadvantage to swapping out the hub it is in large part a matter of aesthetics. I would note that the way the Dexstar wheel is designed, the weight rests on the hub directly within that cut out and not on the lug bolts, some do prefer this design as an advantage.
We have a wide selection of hub assemblies available so you would first need to identify what size axle and spindle you have so as make best recommendation.
In addition I'd like to note that etrailer has complete axle kits available at great prices, such as the Dexter Trailer Axle w/ Electric Brakes - 5 on 4-1/2 Bolt Pattern - 89" Long - 3,500 lbs. # 35545E-ST-89. You would need to measure the axle length.
