Yakima HoldUp 2 Bike Rack for 2 Hitches - Platform Style. I own a CURT 45785 Trailer Hitch Receiver Adapter, 1-1/4 to 2-Inch. Can I use that so I can swap the Yakima rack for my car with a 2 rec to the other car with a 1-1/4 rec? Or do I need to buy Yakima 1-1/4 adapter part and change it every time?

You can use hitch adapters like the # C45785 to carry a bike rack but you should note that doing so does cut the hitch capacity by 50 percent so it's not typically the best option. Your best option would definitely be the part # Y8890278 to convert your Yakima Holdup to the correct size for the hitch on your vehicle.
