The Hopkins Trailer Wiring Harness # 42535 you referenced will fit your 2000 Jeep Grand Cherokee Sport. Each connector is pre-wired and uses original OEM connectors for water-tight protection for a guaranteed fit.
There is no cutting or taping necessary for this harness. I have included a link to a video showing the installation of this product on a 2002 Jeep Grand Cherokee. While it is not the exact model as yours, it is a similar installation process.
