I am certainly glad you are taking safety into consideration when trying to choose your coupler, although none of the Demco couplers would be considered "safer" than the others you mentioned.
Among the Demco Channel Tongue Trailer Coupler - eZ-Latch - Zinc # DM13689-95 and Demco Channel Tongue Trailer Coupler - eZ-Latch - Silver # DM13689-52, I recommend the latter, which is the silver coupler.
The reason I like this coupler over the others is it's silver powder coat finish, which gives it the highest corrosion resistance among the three couplers. It has a 500 hour salt spray rating, compared to the 200 hour rating of the zinc finishes. That means you aren't going to have to worry about any rust with this coupler, and it will give you the longest life and is the best value.
As for the prices, they are different, which is based on a many factors, such as demand; you can see the prices for each on their respective product pages. I have added a link to a video review of each coupler for you to check out, including the one I recommend, the Demco Channel Tongue Trailer Coupler - eZ-Latch - Silver # DM13689-52.
