I was able to find the owner's manual for the 2016 Dodge Challenger and they do not recommend to tow a trailer at all with the manual transmission. If you have an automatic transmission I have added the chart for trailer towing weights for your reference from the owner's manual.

If you need a hitch, I recommend Curt Trailer Hitch Receiver part # C13093 which is a custom fit hitch that also has a concealed cross tube for a nice clean OEM look on the Challenger. I have attached an installation video for your reference. For the wiring, I recommend part # 118656 because the Tekonsha wiring has proven to last a bit longer compared to the other options.

Since you plan on towing you may consider the etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag. If you are not sure how much rise/drop you may need in a ball mount to tow your trailer level, I recommend to take a look at the helpful article I have attached about how to figure the amount of rise or drop you may need.
