I can tell you how to determine the approximate amount of ground clearance you'll have with the Curt Trailer Hitch Receiver # C67JR installed on your 2020 Subaru Outback, though as of this writing (January 2020) we have not been able to test fit this hitch to take an exact measurement.

That said, to find out the ground clearance you'll have, simply measure from the bottom of your Outback's bumper to the ground and subtract 3 (which is the measurement of the hitch receiver, including the collar around the opening).

As you can see by the accompanying photo from the linked installation instructions, the Curt Trailer Hitch # C67JR sits flush up against the bumper so you will have just three inches less clearance with the hitch installed.
