Will this 6562 Teckonsha tester work for the subject vehicle. Basically emulating the Pollack 7-way connector

Yes, the Tekonsha 7-Way, RV-Style Tester for Brake Controllers part # 6562 will work just fine on a 2016 GMC Sierra 2500 with Pollak 7-Way Trailer Connector. There is also a tester for the trailer as well, the Tekonsha Trailer Wiring Circuit Tester part # 8010.
