if I use to lift deer feeder can I leave it hooked up and it stay in place without coming down on its own after a few days

Worm gear winches like the Dutton Lainson part # DL11011 that you referenced by design cannot lower themselves. They basically are the best "brake" winch you can get since it's essentially impossible to have the spool of the winch rotate without the handle being turned.
These are the best style for any type of hoist where something is going to be lifted in the air for this reason as you don't have to worry about a brake mechanism releasing and dropping the load.
