The correct size of tire to use would be the one that the trailer manufacturer calls for but there is not an industry standard for this based on weight. That said, it would be best for you to just replace the tires with the same size you have now, 235/80-16 which is a very common size. In regards to load range, a load range "E" would be sufficient for your weight so it looks like you have the proper setup now. That said, if you are having issues with blowouts then the main thing to make sure of is that you have the tires filled to the proper psi rating. Also, some tire manufacturers just lack quality therefore are more prone to blowouts than others.
The best trailer tire we have and least prone to blowouts is the Taskmaster Providers Radial Trailer Tire part # TTWTRTM2358016E which would be an excellent choice for your Keystone Everest 345S. This tire has a speed rating of 81 mph which is pretty high. This option may cost you a bit more upfront but it will save you money in the long-run due to their longevity.
