The fitting on my existing hose is 1/2 inch across it looks like the only fittings available are the MPT quarter inch is this somehow the only thing available or is this what will work for my application

The standard pigtail harness to go from an RV propane tank is the RV Type 1 ACME 1/4 inch fitting like what is found on the part # 100575-15-MBS you referenced.
If instead you have the older style left-hand thread POL threads you'd also need the part # 204128-MBS. If you are still unsure send me a picture of what you have currently and I'll be able to determine what would work best.
