For any trunk mount bike rack, you cannot open the trunk or hatch when the bike rack is still attached. The hinges and other parts of the trunk lid were not designed to handle the additional weight if the rack. The rack will also not be properly secured and it could fall.
There are several trunk mount bike racks that will fit your 2011 Volkswagen Jetta SportWagen. I have included a link to them for you. The Thule OutWay, # TH56BV, that you have referenced would be my top choice. The retractable cables make installation and removal fast an easy.
If you will be carrying women's, children's, or alternative frame bikes, I recommend using the bike adapter bar, # TH982XT, to carry the bikes more level. I have included a link to a video showing how the adapter works.
