The 180 degrees you are seeing actually isn't a bad temperature and your pickup should be fine, but adding another cooler wouldn't hurt anything. For a secondary cooler on your 2000 Ford F-250 with the 7.3L V8 Diesel engine I recommend the Derale Series 8000 Plate-Fin Transmission Cooler Kit w/Barb Inlets - Class IV # D13504 with the Adapter Fitting # D13025 which is going to be the most effective option for you.

Just make sure that you have room for the overall dimensions of 11" wide x 12" tall x 7/8" deep and mounting dimensions of 10-1/2" tall by either 5-1/4" or 6-3/4" wide and you are good to go!

Attached is a review video as well as a helpful article that explains the best locations for installing a transmission cooler.
