I wish we had a specific set of rollers for your pontoon scissor trailer but since there are so many different designs with boat trailers and everyone has a different idea of how to utilize the rollers it really boils down to what you are wanting for your specific application.
For example, the CE Smith Roller Style Guide-Ons for Pontoon Boat Trailers # CE27672 that you referenced are typically used for pontoon trailers but the rollers sit about 25" above the top of your frame. If your I-beam is 3" wide x 4-1/4" tall then you are good to use this set otherwise you need the kit # CE11416 for up to 3" wide x 5-1/4" frames or part # CE27682A for frames that are larger than 3" wide x 4-1/4" tall.
